Bake a Mango cake
The only redemption in this horrible season are the mangoes. And in India we have them by tons. At home the fridge is cramped with mangoes from the our tree in the yard. Hence, it was the right time to bake a mango cake. The only problem was the weather, cannot face the heat and bake. Yesterday just before Nadal and Djokovic were due to start their final tussle the weather God smiled upon us with thunderstorms and a windy 20 degree celcius temperature. I quickly churned up my seaseon's first mango cake!
Now you can try too! Please excuse the bad picture quality. As we were multi- tasking, like watching the match, baking and clicking pictures couldn't concentrate too well. In the rush in fact lost the single picture of the mango puree too! Do excuse. But the recipe is in complete for everyone to try.
Mango Pound Cake
Ingredients
All purpose flour or maida - 1 cup
Mango Puree - 1/2 cup
Sugar (optional) - 1/2 cup
Eggs- 2
Condensed milk - 3 tb spns
Vegetable oil - 2 to 3 tb spns
Baking soda - 2 t spns
Soda bicarb - 1/2 t spn
Vanilla extract - 1 t spn
Process
Puree three medium ripe to over ripe mangoes, keep aside. In the blender sift the maida with the baking powder and soda bicarb and add all the ingredients except for the oil. Add the mango puree and blend. If the consistency is to thick or lumpy add the oil and blend. The consistency needs to be soft and thick as shown in the top 3rd picture of the collage. Pour in the pre flour coated baking dish and bake at 150 degrees centigrade for 25 to 30 minutes in an OTG.
Disclaimer - DO NOT FORGET TO PRE-HEAT THE OVEN! All baking needs a pre-heated oven and should be taken seriously. LOL!
