Good Old Chicken Roast
The weekend was extra special in Delhi with maximum temperatures even dropping below 30 degrees due to rains. So I was over joyed and tried my friend Paromita's special chicken roast with some improvisation thrown- in, in a non - convection microwave and what can I say people it was amazingly tasty. Whole Chicken Roast
Preparation Time -60 minutes
Serves -4
Ingredients:
Chicken - Whole 1kg, with skin makes it more textured but if you want to avoid the fat go without skin.
Ginger/garlic paste- 20 gms
Butter - 50 gms
Salt and pepper to taste
For the stuffing
Eggs -two boiled and shelled
Potato - one boiled and peeled
Onion- one large sliced
Procedure:
Wash and clean the chicken. Marinade the outside and inside with ginger garlic paste, salt and pepper. Marinade for half an hour. In a pan take a 10 gm stick of butter and add half of the sliced onion, fry until brown, add the mashed egg and potato, add salt and pepper to taste. Stuff the chicken with this mixture, this was my improvisation because that is what was available in my fridge (you could replace this with mashed vegetables of your choice or flavoured rice as is done in middle eastern cooking).
Now put the stuffed chicken on a baking dish and baste the chicken with another 10 gm stick of butter. Micro on combi mode for 8 minutes on each side, basting with butter as required. Then grill for 5 minutes on each side as needed for browning. Let it stay for 5 minutes.
Sauce:
For the sauce take some butter in a pan, add the remaining sliced onions, ginger - garlic paste, and fry till brown, by this time you could remove the juices from the roast into the pan and add some sliced button mushrooms (I had to go without it as I had run out of it) and let it simmer till the mushrooms are done, you could also add a bit of water if needed.
Now assemble it on the serving dish with the chicken first and the sauce poured over next. Serve with tossed vegetables and onion soup. Your perfect dinner or lunch is ready!
